Baked Coconut Shrimp
Adapted from: Weight Watchers
Ingredients:
1/2 lb large Shrimp
1 Egg White
1/4 cup Silk Pure Almond Original
1/4 cup Panko Bread Crumbs
1/4 cup Sweetened Flaked Coconut
Directions:
Preheat oven to 400. Cover baking sheet with tin foil and spray with cooking spray.
Peel, devein, and butterfly shrimp. (How-to Video in case you are like me and didn't know how!)
In one bowl, mix egg white and almond milk together.
In a separate bowl, mix panko and coconut together.
Coat shrimp in egg mixture and then press to coat in panko and coconut. Place on baking sheet.
Spray lightly with cooking spray and bake for 7-9 minutes.
Flip shrimp over and bake for an additional 7-9 minutes until golden brown.
Serve with favorite dipping sauce.

oooh yummy!! i love coconut shrimp but never order it because of the fattiness but if these are only 6 points i could definitely enjoy these a little bit more :-)

ReplyDeleteLove the look of your baked coconut shrimp. One of my faves when we eat out. Now I can make it at home. Thanks for sharing. I went to your home page and saw the photos of your hubby in his flight gear. I showed them to my hubby of 49 yrs and he said to tell you he was at Whiting 50 yrs ago in 1964 and has similar pictures of his Navy training experience. He flew C130's out of SF, CA for the Air Force (long story) during Vietnam and when the Navy took it's borrowed pilots back we were sent to Coronado, CA and he flew the E2A off the USS Ranger for 7 months while I taught school for the last half of his tour. We got out of the Navy and went to fly for Northwest Airlines ( now Delta) living in MN for the last 45 years, and retired almost 18 yrs. ago. You are just beginning your journey.
