Roasted Garlic Mashed "Potatoes" (Cauliflower)
Adapted from: Reddy Or Knot and Inspired by: A Taste of VT
Ingredients:
1/2 Bag of Frozen Cauliflower
1 T Heavy Cream
2 T Butter
2 Garlic Cloves
Salt and Pepper
Pre-heat oven to 275.
Melt butter and mix in an oven safe bowl with garlic cloves.
Bake at 275 for 15-20 minutes until golden brown.
Meanwhile, cook cauliflower as normal until soft.
Combine all ingredients (including garlic!) in food processor and blend until smooth.
These look awesome, making them ASAP!

Okay so... I was eating a My Fit Foods lunch yesterday that came with "mashed cauliflower". It didn't taste much like mashed potatoes at all, it just tasted like cauliflower. Does this recipe taste different? I'm nervous now lol!
ReplyDeleteI think they taste extremely similar. If you aren't sold on the idea yet, I think the ranch mashed cauliflower (http://reddyorknot.blogspot.com/2013/03/mock-ranch-mashed-potatoes.html) is the best place to start because the cauliflower completely absorbs the ranch flavors. These are also really good...you can even add a little garlic powder in the food processor to give them a little more garlic kick (I love garlic!)

ReplyDeleteYour mashed cauliflower looks a lot better than when I tired to make it! Mine came out a little too soupy. Guess I should try the heavy cream next time instead of milk.
ReplyDeleteI definitely think heavy cream over milk gives them a creamy consistency without being watery. Another thing that helps me is to add the liquid to the food processor last and to do it slowly. I add it a little at a time until it is the right consistency (and taste!)
