Chicken nuggets, Sweet Potato Fries, and Grilled Peaches

What makes me even more excited than finding side dishes that go well with my meal is finding side dishes that need to cook at the same temperature as my meal!  Two things cooking at 425 and the peaches on the grill pan means everything ready and hot at the same time :)  These coating trays from Pampered Chef make coating the chicken so easy.

Ingredients:
16 oz chicken breast (2 skinnless, boneless breasts), cut into bite sized pieces
3 T whole wheat italian bread crumbs
1 T panko bread crumbs
1 T parmesan cheese
2 TSP olive oil
Cooking spray

Directions:
Cut chicken into bite sized pieces.  Pre-heat oven to 425.  Put chicken and olive oil in one shallow dish and coat chicken well.  In another shallow dish, mix the italian bread crumbs, panko bread crumbs, and parmesan cheese together.  Throw a few pieces of chicken in crumbs at a time and coat well.  Place coated chicken bites on a baking sheet.  Lightly spray with cooking spray and bake for 9-10 minutes.  Then flip chicken pieces over and cook another 5 minutes until golden brown. 

WW Points+: 4 per half chicken breast (1/4 recipe)

Ingredients:
1 medium sized sweet potato, cut into thin fries
2 TSP olive oil
Southwest Chipotle Seasoning (Mrs. Dash)
Garlic Powder
Salt
Cooking spray

Directions:
Skin sweet potato and cut into thin fries.  Pre-heat oven to 425.  Coat fries evenly in olive oil and toss with chipotle seasoning, garlic powder, and salt to taste.  (Warning: a little chipotle seasoning goes a long way!)  Spread fries across baking sheet careful to give each enough room to cook.  Spray lightly with cooking spray and bake for 15 minutes.  Flip fries over and bake for an additional 10-15 minutes.  Watch fries carefully so they do not burn.

Ingredients:
2 ripe peaches
1/2 cup honey FF greek yogurt
1 T honey
Cinnamon


Directions:
Cut peaches in half and remove pit.  Grill on each side for 2-4 minutes until soft.  Stir a taste of cinnamon into greek yogurt.  Remove peaches from grill and scoop about a tablespoon on yogurt into the center of each peach half.  Drizzle top with honey.
