Red Hot Cheesy Rice

Delicious rice side dish that goes perfectly with mexican food.  I made it with my cheesy shrimp nacho bites and it was a great match.  Don't let the name fool you...it actually isn't that spicy at all.

Red Hot Cheesy Rice
Adapted from: Lick That Spoon
Ingredients:
1 Cup uncooked rice
1 TSP Oregano
1 Can Diced Tomatoes
3 Cups Water
1 TSP Salt
2 TSP Chili Powder
1/2 Cup Parmesan Cheese
Directions:
In a medium pot over medium high heat, mix together rice, oregano, tomatoes, water, salt, and chili powder.  
Bring to a boil.
Reduce heat and simmer for 15 minutes.
Mix in parmesan cheese and stir until melted.

  1. Ohhhh yum. I make "spanish rice" for one of my favorite mexican recipes, but I don't just have a recipe for cheesy, spicy rice-- YUM! I love how this is a simple, clean recipe for something that I used to just buy in a prepackaged packet from the grocery store. Thanks for sharing :-)
