Cheeseburger Bites

Ingredients:
6 oz. lean ground beef1 T McCormick Hamburger Seasoning
4 Laughing Cow cheese wedges (I used French Onion)
12 wonton wrappers (two per bite)
½ cup tomatoes, chopped
1 cup shredded cheddar cheese
Directions:
Preheat oven to 375. Spray six regular sized cups in a muffin tin with non-stick spray.
Put one wonton wrapper in each cup,
Brown the meat.
Microwave meat and laughing cow cheese wedges stirring occasionally until well mixed.
Press a wonton into the bottom of each of the sprayed cups.
Fill each cup with a spoonful of meat/cheese mixture. This should use up half of the meat. Top each with a sprinkle of cheese and tomatoes.
Press a second wonton wrapper onto each cup. This will make the second layer.
Again, fill each cup with a spoonful of meat and top with cheese and tomatoes.
Bake for 15-20 minutes until golden brown.
Baked Onion Rings

Ingredients:
1 medium sized onion2 cups low fat buttermilk
½ cup Panko breadcrumbs
1/4 cup Italian seasoning wheat bread crumbs
1/4 cup crushed corn flakes
Baking Spray
Directions:
Slice onions and place in a shallow dish and cover with buttermilk. Refrigerate and let soak for at least two hours. Mix panko, italian breadcrumbs, and crushed cornflakes together. Dip onion slices in breading and place on a sheet on tinfoil. Spray rings lightly with baking spray and bake for 12-15 minutes at 450.
Tip: Once the crumbs get soaked with the buttermilk, it can be difficult to get them to stick to other rings. Use small amounts of breadcrumb mixture and switch it out often for best sticking results.
Carrot and Apple Slaw

Ingredients:
2 large granny smith apples (cored and cut into matchsticks)3 cups uncooked carrots (cut into matchsticks)
1 ½ T lemon juice
1 T olive oil
1 Teaspoon sugar
Salt and pepper to taste
Directions:
Cut apples and carrots into matchsticks. Toss in a bowl with lemon juice, olive oil, and sugar. Salt and pepper to taste.
